OK, I know it's rather lame, posting about what I had for my lunch yesterday, but it is half term and everything seems a little bit rushed when all three children are at home with the usual mayhem and madness.
This is one of my favorite, quick to fix snacks which should probably have the title of 'Cheats Bruschetta' but hey ho, I think it is just as yummy.
Basically, I toast some ciabatta and rub with a clove of garlic, chop up some tomatoes and put on top of the ciabatta, then drizzle with olive oil and add a couple of basil leaves (I didn't have any) that's it, full of flavour and very satisfying. How perfect could that be?
There is one drawback and it is so minimal it's probably not worth mentioning, but I feel I should.
Depending on how much garlic you rub on you ciabatta, you may have slight garlicky breath, but it's livable!
Right, I'm off to do a bit more decorating - it's looking way too bare around here at the moment!
