Elderflower & Lemon Drizzle Cake
We really want to make the most of the elderflowers this year so at the weekend I did a little bit of research - hence the strawberry and elderflower jam from yesterday.
That recipe is from 'The Edible Flower Garden' by Kathy Brown.
Another recipe I came across that looked equally delicious is, as the title suggests an Elderflower and Lemon Drizzle cake.

This really is an easy cake to make and no prior elderflower cordial making is needed - even though we used homemade - you could just add a bottle into your basket next time you pop to the shops if you fancy.
And don't be alarmed by the amount of liquid that is drizzled onto this baked cake - like I was.
It really is lovely - a deceptively dense cake.
Not much to look at, but wonderfully lemony with a slight sharpness which is just as nice on its own with a good old cuppa or do as I have and add a generous dollop of mascarpone cream with an extra glob of homemade strawberry jam.
ps. sorry for the lack of wordiness today - I've had a pig of a day already and I was so looking forward to it with all the little ones back at school. Let's just say a dustcart and oncoming traffic!
The reason why I moved here (along time ago) was for the slower pace of life and if you have to sit behind a dustcart for a few minutes while the lovely lads do their job then so be it. Not be harassed by some far too rushed person and made to reverse all the way back down the high street without even a thanks.
I was very naughty and stuck my two fingers up - I am so going to pay for this later, living in such a small town. Hey ho.
