Frothy coffee and apple cake

We did and 'oh my word' it came down in epic proportions...and that's not even the best bit.
We had an almighty thunderstorm to go with it - like make you squeal with fright it was that bright and deafening kind of thunderstorm. And yes I did *squeal* with fright...... it was huge!.
One minute I was stood on the back door step ooohhhhing in awe as I watched nature lash out, the next thing I knew I'd literally leaped, screamed and jumped into the arms of the hubby who howled with laughter at my patheticness. I am not normally one to be spooked.
Anyway.......! It's grey, drizzly and miserable (in a weather kind of way) but it's Friday and today is my day for frothy coffee and the most scrumptious home made apple cake.
It's a windfall apple and quince cake from Sarah Raven's 'Garden Cookbook' which she says was passed onto her by Monty and Sarah Don.
I left the quince out as I have none of those to hand and just added an extra apple. I also didn't have any flaked almonds for the topping so I used chopped almonds instead. But I do have to agree it is the richest, fruitiest, moist and most gooiest cake I have ever had the pleasure to tuck into - I could literally live on this cake at the moment.
Well with all that said, have a brilliant day and fabulous weekend - we're off partying this weekend with a real princess...nudge, nudge, wink, wink.
