Cheesy






I'm a great believer in why buy something if you can make it and this runs very strongly through the things I like to bake.

So why buy a packet of cheesy biscuits when you can make them yourself.  Not only are they super melt in the mouth tasty, but they are incredible easy too.

C h e e s y  b i s c u i t s "

100g butter
100g strong cheddar (grated) - I like to split mine 50/50 with white and red cheddar
100g plain flour
edible glitter - optional

Preheat the oven to gas mark 4 / 180ºC

Place everything in a food processor and blend until it all comes together into a ball of dough.  

Wrap in cling film and chill in the fridge for about 30 mins.

Roll out onto a floured surface and cut out into the shape of your choice.  Most of the time we just make discs but at this time of the year the Christmas cutters come out.

Lay out onto a tray lined with baking parchment and bake for approximately 10 mins.  They will harden up as they cool.

Sprinkle with edible glitter (optional) and leave to cool down.

And that's it.  A firm winner with the kids and great for lunch boxes, but the mister and I like to nibble on them with a sliver of cheese.
